Making lunch box can be a very fun thing to do. I usually do rice to with chicken or veggies. It is simple and delicious. The trick is to pack something that doesn’t make much mess. I add this post especially for my husband because he is traveling to work in London this week and he requires cooking his own lunch box there. It is simple and delicious.
Rice & Stir fried chicken with cabbage and carrot
1 cup of rice
Water (depend on what type of rice you use)
For Stir fried chicken
100 g Chicken cut into small pieces
2-3 cloves of garlic
1/2 tsp Black pepper
Salt to taste
1 tbsp Soy sauce
1/2 tsp sugar
1 tbsp cooking oil
1/4 cup Cabbage slice
1/4 cup Carrot cut in to long strip
A pinch of salt and pepper
1/2 tbsp Cooking oil
To cook rice simply follows the cooking direction on the package of the rice you use.
To make a quick stir fried chicken. Heat the pan on the medium, add cooking oil. When the oil lightly hot, add crushed garlic and fried till it turn lightly yellow. Then add chicken, salt, pepper and soy sauce. Fry until the chicken is cook and coated with the entire ingredient.
Use another pan on the medium heat, add oil. When the oil is hot just add cabbage, carrot, salt and pepper. This is not to cook so much but to heat the ingredients and combine it together. Fry for only 1 minute or less, leave the vegetables crunchy and lightly cook.
Put rice in your favourite Tiffin, top with chicken and vegetable and you ready to go.
