Chocolate and raisin pancake

Soft spongy chocolate pancake with few surprises!

This is my sister and my one and a half year old boy favourite. They would beg me to make even for brunch or evening as snacks. But it is a great breakfast; it is easy, quick and delicious. Don’t you like the sights and smell of pouring honey over the hot pancake!

1 cup flour

2 teaspoons cocoa powder

1 teaspoon baking powder

1 large egg

¼ cup milk

 ¼ cup sugar

1/4 cup raisins- soaked in hot water for 2 minutes and rinse dry.

20 gm soft butter

Oil or butter to fry

Sift the flour, cocoa and baking powder together and keep aside.

Whisk soft butter and sugar until sugar lightly dissolved, and then add egg and milk. Gradually add flour mixture to make a thick consistency batter. Add raisin and mix well.

Heat a pan with a thin coat of oil or butter, then add about 2-3 tbsp of batter and fry off until golden and cooked on both sides.

Serve with warm milk, and fruit salad.
