Yummy Vegetarian Breakfast Rolls

We love vegetarian recipes. We considered it healthy and nourishing. Sometime we need extra vitamins boost from those greens & colors. This recipe can satisfy both your appetite and your health… I swear!

Ingredients: 4 Servings

4 tortillas

1 cup bean sprout

1 bag fresh salad leaves like lettuce, endives, baby spinach, etc.

Salt & pepper

1 tbsp oil

Heat oil and sauté garlic until light brown.

Add tofu and fried until brown and crispy.

Add sprout and season with salt and pepper, stir for 30 seconds only and turn off the heat.

Dressing

4 tbsp vinegar

3 tbsp sugar

1 tbsp soy sauce

1/2 tsp salt

2 tbsp water

1 tsp chili flake

Combine all ingredients except chili flake and bring to boil. Simmer and reduce the solutions to 50%. Add chili flake and turn the heat off.

All you need to do now is heat the tortillas, and put your favourite salad leaves in.

Place some stir fried tofu and sprout on the salad leaves and pour in the dressing. Wrap it the way you like and enjoy!

    ohhh. it’s early morning and this recipe just made me so hungry. I’m not a big fan of flour tortilla but I think there is a rice paper that will also work for these.

    That sounds really good, but unfortunately, I can’t eat tofu. Can you think of any soy-free alternatives to add to this filling?

      In India there’s something called “Paneer” that is hard & spongy cottage cheese use alternative to tofu. But you can add more veg to create more texture to the dish like broccoli, cabbage, carrot & peas instead of using tofu. It will be really healthy!

    To answer your question about the rice milk, there is no alcohol. Just brown (or white) rice, vanilla extract and water. Very easy!
