Egg Crepe

I swear I’ve finished cooking these crepes lightning fast. Eggs are so great for breakfast. They are quick and you can do any imaginable things to them still they turn out so yummy. This recipe is delicious and easy, it won’t waste your time to try it.

Ingredients: (4 servings)

1/2 cup all purpose flour

3/4 cup water

A pinch of salt

4 eggs

1/2 spring onion- sliced

1/2 cup beans sprout

Chili sauce

Oil for greasing

Combine flour, salt, water and whisk well until no lump.

Heat the pan over the medium heat and spray cooking oil over the pan surface.

Add about 3 tbsp of the batter in the pan, swirl the pan so the batter spread evenly.

Beat an egg and add to the crepe immediately and cook until the bottom golden brown.

Turn the crepes and cook the over side for 10-20 seconds or until the egg is done.

Transfer the crepe to the platter, add beans sprout, sliced spring onion and chili sauce, and roll it any way you like.

Repeat the process until all batter and eggs are used.

Serve these crepes hot with a cup of hot chocolate milk, and slice banana with the generous drizzle of honey. Now wait for your family to ask for the second. I hope you try…

    Those look so good. I always worry about such a thin batter sticking to the pan though.

      Try to use non-stick pan, and make sure you grease the pan with oil first. If it doesn’t work then, you might need to adjust the batter consistency. But my mom did something wonderful about this- while she poured the batter, she drizzled the batter into the pan without spread them evenly in the pan, then she add beaten eggs immeduately, so the egg help the crepe to come out beautifully.
