Yaseen was scheduled for hepatitis-A immunization today. He didn’t want to enter the clinic. We felt the tension when he met the doctor. He now understood that she would always inject the medicine most of the visits. He cried, but it was ok once he saw the big red lollipop.
So today for his courage we made him the coconut macaroons with plum filling. Coconut has always been his favourite ingredient. And we just got the big case of fresh plum. This is the best console recipe we always love. The sweet & sour plum jam filling worked with coconut macaroons wonderfully.
For macaroon:
2 cups desiccated coconut
1/3 cup sugar
2 egg whites
A pinch of salt
1/2 teaspoon vanilla extract
Preheat the oven at 325 degree F.
Yaseen enjoys seperate egg yolks.
Whisk together egg white, sugar, salt and vanilla for 10 minutes by hand or until the sugar dissolved.
Add desiccated coconut and mix well.
Grease the backing tray and scope about 2 tbsp of the mixture in each time. Make a well in the middle with spoon for the filling.
Bake for 20-25 minutes or until cook and golden brown.
Plum Jam filling
500 gm plum- removed stone and cut into 8 pieces each plum
1/2 cup Sugar
1/2 cup Water
Mix everything in the medium sauce pan and bring to boil.
Simmer in the low heat for 15-20 minutes or until thicken.
Remove from the heat and cool down.
Fill each macaroon with some plum jam.

These look nice – like British macaroons. I like the chewy, coconut taste. Plum jam is such a nice idea, a change from raspberry. It will be plum season here soon.

These are such cute pictures! It’s a good time of year where I am for cookies with jam since fresh fruit is everywhere. And these look delicious! One question: does dessicated coconut mean sweetened coconut?
Dessicated coconut is dried coconut flakes. It can be sweeten or non-sweeten. In this recipe, I use non-sweeten one. If you had sweeten one, then you have to adjust sugar in the recipe. Thanks for stopping by.

Those macaroons look so good. I’ve only eaten store-bought ones, but I imagine that homemade would be excellent. I like that you topped them with jam too.

Poor Yaseen! I used to scream when I had to get shots! Macaroons look beautiful…I’m glad he at least got to enjoy his favorite snack (coconut, as you posted a few weeks ago). I love how you’re already teaching him how to separate eggs and be a great chef like his Momma!

What an interesting method to cook them on the pan instead of baking, I will have to try that. I usually make these in the oven.
This is baking recipe! I use the round baking tray, not a pan. Bake at 325 degree F for 15-20 minutes. I’m glad you love the recipe.

I’m very tempted to make this recipe. I guess any jam would be fine, but I’ll look out for plums. I don’t think they’re ready here, yet.

Do you need to peel the plums? I think I’m going to make these with my kids.
I think if you peel them, it will make the jam smoother. So if you like smoother texture jam, then try peeling them first before chopping. Taste your plum if it’s sourer then adjust sugar in the recipe. Let me know how it go!
